I have been so busy lately that I haven’t had much time to post recipes. There’s been a lot going on and I’ll be sure to share those with you. But for now I wanted to bring you a quick and simple turkey chili. Weather here on the east coast feels like summer, but before you know it the cold weather will be here in full effect. I hope you enjoy this warm bowl of happiness, which is great for football tailgates and parties.Ingredients:1/2 to 2 lbs ground turkey3 cloves garlic, minced1 small onion, diced8oz can tomato sauce2 tbsp hili powder1 tsp cumin1 tsp ground oregano1 tsp salt & pepper, to taste1 tsp cayenne pepper, to taste1 15oz can kidney beans, drained and rinsed1 15oz can pinto beans, drained and rinsedShredded Cheddar, for garnishChopped green onions, for garnishSour cream, for garnishPreparation:
Place the onions in a large pot & sauté for 2 minutes or so until translucent. Next add ground Turkey and garlic. Cook over medium heat, until browned. Pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir and cover, and then reduce the heat to medium low. Simmer for 35 to 45 minutes, stirring occasionally.
Finally add the beans and simmer for 10 minutes. Serve with shredded Cheddar, green onions and sour cream.
Tis the season for chili and I do like it with beans!
