This little salad is great for lunch, or goes well along side a steak, chicken or seafood dinner. The nutritional value of this salad is a plus as well. You can add any bean to it to jazz it up anyway you like. It’s something easy to make for a weeknight as well. As a stay at home mom I am always on the run and trying to come up with different ideas for dinner. I hope you enjoy my little salad couscous twist.
1box flavored couscous ,cooked ( I used garlic)
1 can chickpeas (or your choice of bean)
1 English cucumber, peeled, seeded, and finely chopped
1 to 2 tomatoes, chopped
1/4 cup fresh parsley leaves, chopped
Salt and freshly ground black pepper, to taste
1/4 cup olive oil
Juice of 1 to lemon, (you can also use vinegar about 1/4 cup)
In a large bowl toss all the ingredients together. Enjoy!!
Tip: If you want to make it look fancy, place it in a martini or margarita glass. Those glasses aren’t just for drinking 😉
