Dulce de Leche Crepe Cake

16 layers of absolute indulgence. Homemade crepes with dulce de leche topped with flambe bananas and walnuts. It’s an easy recipe that anyone can do. There are so many filling options it’s endless.  I didn’t feel like waiting to long so that’s why my dulce de leche melted 🤷🏻‍♀️. . But if you have time and patience wait until cooled to distribute the filling. Each layer has a thin layer of dulce de leche. Really wish I had vanilla ice cream. I hope you enjoy this delicious recipe.

Ingredients 

1/2 cup warm water

1 cup milk

4 large eggs

4 Tbsp unsalted butter, melted, plus more to sauté

1 cup all-purpose flour 

1 Tbsp granulated sugar

1 teaspoon vanilla extract 

pinch of salt

Dulce de Leche, optional for layering

Preparation: 

In a blender,  add the crepe ingredients in the order they are listed: 1/2 cup warm water, 1 cup milk, 4 large eggs, 4 Tbsp melted butter, 1 teaspoon vanilla, 1 cup all-purpose flour, 1 Tbsp sugar and a pinch of salt. Blend until well combined, about 30 seconds. 

Heat a medium a small non-stick pan over medium heat. Spread butter all around pan until lightly coated. Once the butter is hot, add about 1/4 cup of batter, or enough to lightly coat the bottom of the pan, swirling the skillet as you add the batter to evenly coat the bottom of the pan. Sauté about 30 seconds per side or until lightly golden then flip using a thin edged spatula or butter knife and sauté another 30 seconds on the other side. Remove to a clean surface such as a cutting board or a large long plate and allow the layers to cool.
