We are all looking for healthy alternatives when it comes to food. The more color we add to a dish the better. This is a simple plating packed with delicious flavor and tons of nutrients. I usually make this dish with a whole wheat pasta, but today I went ahead and used some quinoa pasta. For some of you who may not know, Quinoa is one of the healthier foods out there. I love that this pasta is gluten free, low in sodium, rich in fiber and so much more. Enjoy!
