Fiesta Friday lets have some Chicken Fajitas (Red peppers, Onions, Sour cream). Topped with Sharp Chedder Cheese and Jalpenos with a side of Pearl orange and green onion Couscous. Joined with a Cabo Wabo Margarita.

Thanks for stopping by my blog the other day! We’re usually so tired on Fridays that it has become our “order pizza in” night but tonight I think we are going to make our own pizza of sorts – pizzettas on flour tortillas. I plan to just put out a bunch of toppings and let everyone create their own and then pop them all in the oven.

Chicken Enchiladas are relatively easy to make. I normally don’t have specific meals for fridays but try to have Mexican night often! And I love skinny lime margaritas! hehe
