Fennel Salad

This is such an easy and refreshing salad to enjoy either for lunch, dinner or even for BBQ party. A lot of people don’t think about using fennel as a main ingredient in a salad.  The taste is very refreshing with some hints of licorice.  Fennel is great because it retains its crunchy texture longer than most salad ingredients.  I love using my mandonline to create some thin slices of fennel. Now is the part you can get creative add some of your other favorite fruits and veggies.  I also went ahead and made a grapefruit shallot vinaigrette which balanced all the flavors out.  I hope you enjoy and keep cool.

Ingredients Fennel Salad:

1 Fennel bulb, julienne

1/2 cup parsley, chopped

1/2 Pink Grapefruit, peeled and sliced

1/2 cup Cherry Tomatoes, sliced in half

1/2 cup Yellow Tomatoes, sliced in half

1 Avocado, chopped

Ingredients Vinaigrette:

1 small Shallot, diced

Juice of 1/2 a Pink Grapefruit

1/2 teaspoon Pink Grapefruit zest

1/4 cup Extra Virgin olive oil

Salt and Pepper, to taste

Preparation:

In a large bowl toss all salad ingredients together. Next in a small bowl whisk vinaigrette ingredients, pour over salad and toss together. Enjoy

    Wow, really nice – shallots and avacados and tomatoes are a perfect base. Hadn’t thought about using fennel and citrus before but wil give this a try this weekend. Thanks for the great idea!
