Golden Milk

This recipe has been requested on my social media ever since I posted a photo of my overnight oats using golden milk.  Golden milk’s main ingredient is Turmeric. That’s what gives it that beautiful golden color.  Turmeric has powerful anti-inflammatory effects and is a very strong antioxidant.  Try adding this to oats, cereal, tea, coffee and smoothies.  We are all looking to have a healthy start to the new year and this is the perfect recipe.

Ingredients:

1 TBSP Turmeric

1/4 TBSP Ginger

1/4 TBSP Cinnamon

1 TBSP Honey, more if desired

2 TBSP Hot water

2 cups Milk, Cashew, Almond, Coconut or regular Cows milk

Preparation:

Place ingredients in a bowl. Mix Turmeric, ginger, cinnamon and honey until incorporated. Next add hot water, stir. Now add Milk, stir.  Finally take Mason jar and pour milk, close and refrigerate.

Lizzy Jays Juice

As some of you may know, I love to try different cleanses and juices. I love to make my own as well. This time I got to try Lizzy Jays juice. I was super excited to see what blends they had. I have to say these juices are super refreshing and the smoothie for night time was the perfect way to end the day. Like I have mentioned before, cleanses are a great way to eliminate toxins from your body. I’m no health expert but I know that for me I feel energized and healthy.  Cleanses are mind over matter. Avocado Bread

Avocados have become the new craze on the Internet.  I had appearances on the Dr.Oz show and Fox 29 here in Philadelphia and they wanted me to prepare different avocado recipes for each.  Being that my dad is a baker I wanted to try what I’d been taught since a child and resorted to baking an avocado bread.   I know it sounds weird but why let all the other fruits and veggies have fun being bread?  Avocados are so versatile and I promise this recipe will not disappoint.

Avocado bread
Ingredients:
 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • pinch of salt
  • 1/4 cup unsalted butter, room temp
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/4 teaspoon vanilla
  • 1/2 cup mashed avocado*
  • 1 teaspoon lemon juice
Preparation:
 Preheat the oven to 325°F and line a small loaf pan with parchment paper.
In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In another bowl, cream together the butter and sugar until light and fluffy. Mix in the egg and vanilla throughly and then the mashed avocado and lemon juice.
Gently fold in the flour mix, being careful not to over mix.
Spoon the batter (it is very thick) into the prepared pan and bake for 35-45 minutes or until an inserted wooden skewer is clean with a few crumbs clinging. Cool completely, slice and enjoy.

Panzanella

Panzanella salad is probably one of my favorites to have anytime during the year. It’s such a versatile salad in which you can add grilled vegetables or roasted veggies. To make it a little bit healthier I went ahead and used a whole wheat sprouted bread. It’s a super easy lunch or dinner to get together in no time. Enjoy! 

Ingredients: 

1 loaf sprouted bread, cut into thick cubes 

1/2 cup fresh basil, chopped 

2 Tablespoons capers

1 teaspoon lemon zest 

Juice of one lemon 

2 large tomatoes, cut into wedges 

Salt & pepper, to taste 

2 large garlic cloves, minced 

1 cup pearl mozzarella balls

1 1/4 cups extra virgin olive oil 

1 red onion, chopped 

1 14oz can if artichokes quarters 

1 small eggplant, peeled and cubed 

Preparation: 

Preheat oven at 375 F degrees 

On a baking sheet add artichokes, onions and eggplant. Season with salt, pepper and drizzle 1/2 cup olive oil. Place in the oven for 35 minutes. 

 

On medium to high heat in a large skillet add 1/2 cup olive oil. Add bread toss together & let bread toast up on all sides. Once done set aside. 

In a large bowl add lemon juice, lemon zest, salt, pepper, remaining olive oil, tomatoes, garlic, mozzarella and basil. Stir everything together. Next add the bread and roasted vegetables. Toss everything together and serve

Zucchini Fries

Zucchini has become one of my favorite vegetables to play with in the kitchen.  My kids love it too, which makes it easy to add to any dish.  Making these zucchini fries was super easy.  Don’t get me wrong I’m all about having some delicious fries or sweet potato fries, but I like to switch it up.

Ingredients;

2 large zucchinis, cut into wedges
Black pepper, to taste
2 cups Panko crumbs
1 cup Parmesan cheese
Extra virgin olive, for coating pan

Preparation:

Preheat oven to 400 degrees

Oil baking dish and set aside.

In a large bowl add Panko, cheese and pepper.  Dip wedges into Panko mixture and set on to baking dish.  Repeat.  Set in the oven and bake for about 20 minutes or until golden brown and crispy.  Enjoy with your favorite dip.

Tuna and Avocado Patty

I love to make different kinds of patties from black bean to fish patties. This recipe is awesome especially if you’re on a health kick, gluten free or dairy free diet. This tuna  patty consists of all healthy alternatives. The patty is super moist because of the avocados.  It’s another great meal if you’re on the run. Now let’s get started.

Ingredients:
2 cans tuna, in water
1/3 cup almond meal
1/2 cup flaxseed meal
1 avocado, chopped
1/2 teaspoon cayenne pepper
1/4 teaspoon paprika
Pinch black pepper
Zest of 1 lemon
1/3 cup parsley, chopped
1/4 cup chives, chopped
1-2 tablespoons coconut oil, for frying

Preparation:

In a large bowl combined all of the above ingredients until well incorporated. Next make the desired size patty.

In a medium skillet on medium to high heat add coconut oil. Now place the patties on the skillet. Cook for about 3-4 minutes per side until golden brown and crispy. Serve with a cabbage salad and a tomatillo salsa.

Roasted Pineapple

Did you ever think about roasting fruit? I think roasting fruit really brings out the sweetness of it. This dessert is a great way to enjoy fruit in the winter months. In the summer we usually grill our fruits because we want to avoid having the oven on. These pineapples came out perfect. I made some homemade mint and lemon whip cream. But feel free to enjoy it on its own or with a scoop of your favorite ice cream.

Ingredients:
Pineapple, peeled and cut into chunks
1/3 cup brown sugar
Pinch salt
1 tablespoon ground cinnamon
1/2 teaspoon lemon zest

Preparation:
Preheat oven to 400 F degrees

Toss pineapple chunks with brown sugar, salt, cinnamon and lemon zest. Place on parchment paper atop of baking sheet. Roast for 15 to 20 minutes. Half way through turn pineapples.

Place on serving dish and enjoy.

Homemade lemon and mint whip cream

Ingredients:
1 cup heavy whipping cream
2 tablespoons powdered sugar, more to taste
6 mint leaves, chopped
1/2 teaspoon lemon zest

Preparation:

Place a medium bowl in the freezer for about 5 minutes.

Now that the bowl is cold, add all the ingredients to the bowl. Using a standup mixer or hand mixer beat on high speed for about 3 to 4 minutes until you have firm stiff peaks. Serve with you favorite dessert.

Ribbon Asparagus Salad

Seems like everyone is still on the kick on eating healthy this year. I have been trying to add more raw veggies into my diet. This asparagus salad has become a favorite in my house. Not only does it look beautiful, but it tastes amazing and refreshing. The salad goes great with a side of homemade soup. You can top also it with pretty much anything. I used shaved parmesan and toasted pine nuts.  Enjoy!

Ingredients:

10-15 large asparagus spears, trimmed
Pine nuts, toasted
Parmesan cheese, shaved for garnish
Salt & Pepper, to taste
1/4 cup extra virgin olive oil
1/4 cup lemon juice

Preparation:
Take 1 asparagus spear at a time, use a vegetable peeler to shave spears into long, thin ribbons. Add ribbons to a medium bowl. Next add pine nuts, olive oil, s&p and lemon juice. Toss together place on serving dish and top with shaved Parmesan cheese.

Fennel Salad

This is such an easy and refreshing salad to enjoy either for lunch, dinner or even for BBQ party. A lot of people don’t think about using fennel as a main ingredient in a salad.  The taste is very refreshing with some hints of licorice.  Fennel is great because it retains its crunchy texture longer than most salad ingredients.  I love using my mandonline to create some thin slices of fennel. Now is the part you can get creative add some of your other favorite fruits and veggies.  I also went ahead and made a grapefruit shallot vinaigrette which balanced all the flavors out.  I hope you enjoy and keep cool.

Ingredients Fennel Salad:

1 Fennel bulb, julienne

1/2 cup parsley, chopped

1/2 Pink Grapefruit, peeled and sliced

1/2 cup Cherry Tomatoes, sliced in half

1/2 cup Yellow Tomatoes, sliced in half

1 Avocado, chopped

Ingredients Vinaigrette:

1 small Shallot, diced

Juice of 1/2 a Pink Grapefruit

1/2 teaspoon Pink Grapefruit zest

1/4 cup Extra Virgin olive oil

Salt and Pepper, to taste

Preparation:

In a large bowl toss all salad ingredients together. Next in a small bowl whisk vinaigrette ingredients, pour over salad and toss together. Enjoy

Zucchini ribbons with Aglio e Olio

We are big fans of pasta in our house. But summer months sometimes makes it hard to have heavy pasta. One of the easiest veggies I found to substitute pasta is zucchini. To prepare this I use a mandoline which makes those beautiful strips for you. My kids absolutely love this dish. Great to serve for a datenight or family and friend dinner.

Ingredients:
2 Zucchinis, sliced thin using a mandoline slicer
1/3 cup of Extra Virgin Olive Oil
6-7 Garlic cloves, minced
½ Teaspoon of Crushed red pepper flakes
Pepper, to taste
½ Cup Parsley, chopped
2 Tablespoons of anchiovies
Parmesan cheese for topping, optional

Preparation:
Add olive oil to large sauté pan over medium to high heat. Add anchovies and crushed red peppers, cook for about a minute. Then add garlic and pepper. Start to add the zucchini slices and toss everything together with tongs. Cook for about 5 to 6 minutes until soft. Next toss in the parsley, place in a large dish or into individual dishes and top with Parmesan cheese.
