Buffalo Cauliflower Bites

I have been on a cauliflower kick lately, mainly because there are so many great options with this great vegetable.  Since its Super bowl Sunday this weekend I figured this appetizer would be a crowd pleaser. Don’t get me wrong, I love my buffalo wings, but always feel guilty after eating so many.  These buffalo goodies are guilt free in my book.  The taste is amazing and it goes hand in hand with a nice cold glass of beer. If you have vegetarian friends and are always out of options on what to make for them, well I think this will make them happy.  This little recipe is super easy to make.  I hope you enjoy.

Ingredients:

1 head of Cauliflower, cleaned and broken into pieces

1 Tablespoon of Garlic powder

1 Tablespoon of Onion Powder

1 Teaspoon of dried Basil

2/4 Cups of All Purpose flour

1 Cup of Water

3 Tablespoons of unsalted butter

2 Cups of Franks Red Hot Buffalo Hot Sauce

 

Preparation:

Preheat oven to 450 degrees.

In a large bowl mix flour, garlic powder, onion powder, basil and water together. This will be your batter.  Take the cauliflower pieces and toss them in the batter. Place them side by side on a baking sheet and bake for 20 to 25 minutes.

Meanwhile in a small sauce pan. Melt butter and whisk in buffalo hot sauce.  Simmer for about 5 minutes. Pour into a large bowl.

After cauliflower is done baking toss them in the bowl with hot sauce. Place them back in the oven for another 5 to 6 minutes.

Enjoy with some ranch or blue cheese dressing with celery sticks.

    Okay, that does it! I need to revisit cauliflower. I haven’t tried it since I was a child. I didn’t like it, but I think it was mostly a texture thing. I keep seeing creative recipes like this one. My curiosity has peaked!

    This is creative! Buffalo chicken wings are one of my favorite tv snacks, but this is such a healthy option 🙂
