When I started this blog almost 6 years ago my dream was to meet Rachael Ray. I met Rachael when I was on the Dr.Oz show. I admire how hard of a worker she is. When I got this opportunity to be on her show I was beyond thrilled. In this clip I give you some fun game day ideas for this weekend. Enjoy!

The Super Bowl is right around the corner. For all of us entertaining, this recipe will be a touchdown. I was super excited to partner up with Lobster from Maine, and Foodiechats on this. I’m a big fan of lobster. Sometimes the lobsters in stores aren’t as fresh as we would like, but Lobster from Maine offers freshness and overnight delivery, providing you with the best.

Ingredients:

2 lobster tails, from lobster from Maine

1 tablespoon onion powder

1 tablespoon garlic powder

2 tablespoons lemon juice

Zest of 1 lemon

1 8oz package cream cheese, room temperature

4 tablespoons unsalted butter, melted

1-2 tablespoons horseradish

Salt & pepper, to taste

Parsley, chopped for garnish

Crumbled bacon for garnish

Preparation:

Bring a large pot of water to a boil. Season with salt and add lobster tails. Cook for about 6-8 minutes depending on the size of the tails.

In a large bowl add, lobster tail meat, butter, lemon juice, lemon zest, cream cheese, onion powder, garlic powder, s&p and horseradish. Mix everything together until well incorporated and smooth. Garnish with parsley and bacon

Buffalo Cauliflower Bites

I have been on a cauliflower kick lately, mainly because there are so many great options with this great vegetable.  Since its Super bowl Sunday this weekend I figured this appetizer would be a crowd pleaser. Don’t get me wrong, I love my buffalo wings, but always feel guilty after eating so many.  These buffalo goodies are guilt free in my book.  The taste is amazing and it goes hand in hand with a nice cold glass of beer. If you have vegetarian friends and are always out of options on what to make for them, well I think this will make them happy.  This little recipe is super easy to make.  I hope you enjoy.

Ingredients:

1 head of Cauliflower, cleaned and broken into pieces

1 Tablespoon of Garlic powder

1 Tablespoon of Onion Powder

1 Teaspoon of dried Basil

2/4 Cups of All Purpose flour

1 Cup of Water

3 Tablespoons of unsalted butter

2 Cups of Franks Red Hot Buffalo Hot Sauce

Preparation:

Preheat oven to 450 degrees.

In a large bowl mix flour, garlic powder, onion powder, basil and water together. This will be your batter.  Take the cauliflower pieces and toss them in the batter. Place them side by side on a baking sheet and bake for 20 to 25 minutes.

Meanwhile in a small sauce pan. Melt butter and whisk in buffalo hot sauce.  Simmer for about 5 minutes. Pour into a large bowl.

After cauliflower is done baking toss them in the bowl with hot sauce. Place them back in the oven for another 5 to 6 minutes.

Enjoy with some ranch or blue cheese dressing with celery sticks.

Buffalo Chicken Pasta

As the Superbowl approaches us this weekend, there are lots of parties going on.  If you’re hosting one, I’ll bet your thinking of what to make.  Well I hope this dish helps you out.  I took the famous Buffalo Chicken wing recipe and turned it into a meal, that’s super easy and fast to make.

Ingredients:

6 Boneless Chicken Breast, cut into strips or cubes

Salt & Pepper

Extra Virgin Olive Oil

1 cup of Ranch Dressing (or Blue Cheese)

1/2 Cup of Green Onions, Chopped

1/2 cup of Franks Red Buffalo Sauce

1 lb of Penne Whole Wheat Pasta (or regular Penne)

1/4 cup of Blue Cheese Crumbles for garnish (optional)

Preparation:

Bring a Large pot of water to a boil, salt and add Penne.  Cook until Al Dente (This means that it should be firm, but not hard, and should take about 5 minutes depending on the brand).

Clean, Cut chicken into strips or cubes, season with salt and pepper.  Add Olive oil to a skillet on Medium heat.  Add chicken and cook until nice and golden.  Should take about 6 to 8 minutes.  Add Ranch dressing and Buffalo Sauce, cook for about 2 minutes or until begins to bubble.  After that add penne and green onions right into the skillet and mix everything together.  Plate on to a nice dish and add blue cheese crumbles.  If you would like you can place this on a baking dish and bake for about 10 minutes.  Once done place on table and let the enjoyment begin.
