While Popeyes and Chick-fil-A keeping having their battles and running out of chicken sandwiches. I’m just over here making my own delicious fried chicken sandwich. This perfectly juicy  and crispy fried chicken will keep you wanting seconds. It’s all about guilty pleasure with this recipe.

Ingredients:

2 teaspoon cayenne

2 cups buttermilk

4 brioche or pretzel hamburger buns

Pickles of choice

Salt and ground black pepper, to taste

4 chicken breast or boneless thighs

Vegetable oil, for frying

3 cups all purpose flour

1 teaspoons paprika

1 teaspoon onion powder

1 teaspoon garlic powder

Shredded lettuce

Sauce ingredients:

1/3 cup mayo

1/4 cup franks red hot, or hot sauce of choice

Sauce preparation:

Mix all of the ingredients in a small bowl and set in the refrigerator until ready for use.

Preparation:

Start by soaking chicken into buttermilk with salt and pepper. Set in the refrigerator for 2 hours.

Fill a large Dutch oven or pot with about 3 inches of oil. Attach a deep-frying thermometer to the side of the pot and bring to 350 degrees F over medium heat. Line a large baking sheet with paper towels or cooling rack and set aside.

Meanwhile mix the flour, paprika, garlic powder, onion powder cayenne, salt and pepper in a large bowl.

Take the chicken out of the buttermilk mixture and let the excess drip off. Add to the flour mix, making sure chicken is completely covered in flour. Place into 350 F degree oil (be careful with hot oil, it can splatter). Fry until the chicken is a deep golden brown with an internal temperature of about 170 degrees F, about 8-10 minutes depending on the size. Remove to the lined baking sheet. Set aside.

Next cut the buns and butter them, toast in a toaster oven or broiler, cut-side up, until golden. Spread sauce on toasted buns, add fried chicken, 4-6 pickles on top and finally lettuce. Enjoy!
