Homemade Hummus ready for some veggies. This recipe is super simple and perfect for entertaining or for a late night snack. Once you make this it will be hard to go back to store bought hummus. I hope you enjoy!
1 can 15 oz chickpeas, rinsed and drained
¼ cup lemon juice
1-2 garlic cloves
Salt and pepper, to taste
1/4 cup tahini
4 tablespoons ice water, more if needed
½ teaspoon ground cumin
1 tablespoon extra-virgin olive oil
Any of the following garnishes: drizzle of olive oil, sprinkle desired nuts (pine nuts, almonds, walnuts whatever you desire), chopped fresh parsley
Preparation:
In a food processor or high-powered blender, combine the chickpeas, lemon juice, garlic, s&p, cumin and tahini blend until the mixture is thick and creamy, stopping to scrape sides if necessary.
While running the food processor, drizzle in 4 tablespoons ice water. Blend until the mixture is ultra smooth, pale and creamy. (If the tahini sauce is thinner add a tablespoon less of water)
Scrape the hummus into a serving bowl or platter, and top with evoo, parsley and nuts. Serve with pita chips and veggies .
