Lemon Ricotta Cookies

The easiest, most delicious and fluffiest cookies. It’s my lemon ricotta cookies. I have a love and hate relationship with these cookies. Reason why I love them is because they are so freaking delicious and I hate them because I can’t stop eating them.

Alot of Italian families have their own recipes for these little delights. This is just my version. Below you will also find a video I did for my YouTube channel. I hope everyone is having a great holiday season. Enjoy! ❤️ Ingredients:

2 1/2 cups All purpose flour 

1 1/2 cups sugar 

1 teaspoon baking powder

1 stick unsalted butter, room temp

2 eggs, room temp 

Pinch salt 

2 cups whole milk ricotta cheese 

Juice and zest of half a lemon 🍋 

Preparation: 

Preheat oven to 375 F.

For dry ingredients in a medium bowl combine the flour, baking powder, and salt. 

For the wet ingredients take a large bowl and add butter and sugar. Using an electric mixer beat for about 2 minutes until light and fluffy. Now add an egg at a time beat until well incorporated. Add ricotta, zest and lemon juice. Beat for another minute. Finally start to add the dry ingredients slowly. 

Now line the baking sheets with parchment paper. Using a small ice cream scoop or tablespoon spread the cookie dough out into scoops. Bake for 15 minutes. Remove from the oven and cool. 

Glaze:

Ingredients:

1 cup powder sugar

1/2 lemon juice and lemon zest

Meanwhile make the glaze. In a small bowl mix powder sugar, zest and lemon juice. Spread over cookies and let stand for an 1 hour.

    Hello! These cookies look delicious. The directions say to add the baking powder but I don’t see it listed in the ingredients. How much baking powder is in the recipe?
