BLPT Sandwich with Gorgonzala Cheese

If you love BLT’s you will love this little twist.  I present to you a BLPT, Bacon (turkey bacon in this case), Lettuce, Pear and Tomato.  I also decided to add some gorgonzola cheese.  I love cheese with fruit and even honey.  Okay so all you to do is pile it on and Toast it, grill it or even place it on a skillet. 

Ingredients:

1 Pear, sliced

1 Tomato, sliced

Lettuce, leaf broken in half

Rye Bread, 2 Slices

Butter, spread on bread (optional)

1/4 cup of gorgonzola cheese per sandwich (you can add less or more)

Turkey Bacon ( or vegan and real bacon)

Preparation:

Spread some butter on rye bread and pile all your ingredients on. Place on Grill, Skillet or Toast to get a nice golden crispy color.  Cut and enjoy with some Sweet Potato Chips.

Poached Eggs

I havent poached eggs in so long.  My mom use to make them for me as is, or she would add it to soup.  I forgot how tasty they really are.  My little ones loved them so much they had seconds.  I wanted to make something for lunch that was different and since it was still early enough, it would probably considered brunch.  I took a tortilla because it is lighter than bread, added a slice of ham, tomatoes, a teaspoon of mascarpone cheese and topped it with the poached eggs and some salt, pepper and parsley.  The combo turned out delish.  Hope you enjoy.

Tip:  A little secret I will share with you some of you may know already but if you add a teaspoon of vinegar to the bowling water it will help the eggs in the process of poaching.   (pictured below)

Ceviche

A lot of people ask what Cevicheis.  Is it good?  What does it takes like?  Well I have had Ceviche before and I can personally say I love it.  Its super refreshing and light.  I decided to make some last night and the results came out terrific.  There are so many different ways to make Ceviche, but I made the classic version.  I used Tilpia and chopped them up in cubes, marinated in Lime juice for about 45 min.  (longer if you would like.) (Tip: The citric acid causes the proteins in the seafood to become denatured, basically cooking the fish.  Another fish that is great for this dish is Halibut). 

I chopped up avocado, purple onion, the outer part of the tomato (basically cutting around the tomato because if not the pulp of the tomato causes too much juice), garlic powder, dash of salt, pepper, hot sauce (optional), serrano peppers, cilantro and some olive oil.  This is pretty much a fresh salad.  After about 45 mins or so drain the lime juice and place fish in salad mix.  You can put them on a dish or a fancy glass to capture the eye.  I enjoyed this with some Garlic and Black bean tortilla chips.  

Ceviche can be prepared in so many ways.  Like I have mentioned, some people make it with Shrimp, scallops and there is also a liquid ceviche that can be made with a tomato puree or tomato juice. Before preparing this dish just make sure you research your fish and make sure your market sells the freshest fish.  Enjoy!

Chicken Topped with Fresh Tomatoes and Onions

 I took some chicken breast, dipped it in some egg and whole wheat flour.  Next, I placed it in a hot skillet with olive oil, drained it on some paper towels afterwards, and placed it on a bed of herbed couscous.  Finally, I topped it with fresh stewed tomatoes, onions and fresh parsley.  Another light Spring/Summer dinner.  Nothing like feeling light and having room for some dessert or coffee.

 Tomatoes lose some of their vitamin C when they are cooked, but heating, processing or crushing can boost their antioxidant power.  Cooked tomatoes are a good source of lycopene, a strong antioxidant that may play a role in reducing heart disease and some types of cancer.  The bright red color comes from the lycopene. The only thing is that if you slice a tomato you will not get as much nutrients from it; So try tomato sauce or stewed tomatoes instead.
