Easy Banana Walnut Muffins

When I was younger my dad used to make these banana muffins and my absolute favorite part was the muffin top. This recipe is super easy and it comes out perfectly moist every time. I also used less sugar this time around. 

Ripe banana work wonders in this recipe

Ingredients:

2 ripe bananas, mashed 

1/3 cup melted butter, undated 

2/4 cups light brown sugar or if you want it sweeter 3/4 cups

1 large egg, room temp and beaten

1 teaspoon vanilla extract

1 teaspoon cinnamon 

1/4 ground nutmeg 

1 teaspoon baking soda

Pinch of salt

1 1/2 cup of flour

1 cup chopped walnuts

Preparation: 

Preheat oven to 350 F. prepare muffin pan with muffin liners.

Next mash the bananas in a large bowl. Stir the melted butter into the bananas. Mix in the sugar, egg, vanilla extract, cinnamon and nutmeg. 

Now add the flour, baking soda and salt and walnuts. Mix everything together until incorporated. Don’t over mix. Using an ice cream scoop, scoop into each prepared muffin tin. Bake for 20 minutes. 

Remove from oven and cook .
