I hope everyone is having a fantastic weekend. If you live or will be in the Philadelphia, PA area tomorrow 6/10 from 5pm to 7pm, I will be whipping up a Strawberry Salad at Whole Foods Market on Callowhill 2001 Pennsylvania Ave Philadelphia, PA 19130. What’s for dinner? A heirloom tomato and snap pea salad with tarragon, salt, pepper, olive oil and balsamic. Topped with Burrata e Tartufo Nero (Black Truffle burrata) = Perfection 🤤

What’s for dinner? Broccoli lemon butter pasta. This pasta dish will become a family favorite. Even those picky eaters will love this dish. It’s a great way to incorporate those veggies. Recipe below 👇

What’s for dinner? Perfectly seared scallops. On a purée of asparagus topped with some asparagus, pea shoots and for the chefs kiss a drizzle of really good olive oil. It’s spring on a dish. Tip for cooking scallops: remove the side-muscle if you find any still attached. Pat completely dry. Season and cook on a very hot pan. I like to add evoo and butter. Cook for 2-3 minutes per side. Don’t mess with it once placed on the pan. Remove and serve.

What’s for dinner? How about a side of roasted carrots, whipped goat cheese and topped with pistachios? This combination just works so well. The sweetness of the roasted carrots with the creamy/tanginess of the cheese = perfection. I roasted the carrots with some evoo, salt, pepper, garlic powder and thyme. For the goat cheese I whipped it up with some evoo, pepper, lemon zest and lemon juice. This is a great side for Easter 🐰
