Zucchini Quiche

Yes I said Quiche! I love making Quiche.  It’s one of those things that you can put any kind of filling in and it just works.  Since today is Monday I figured I would keep it meatless.  I know alot of Quiches are made with a pastry crust but I figured I could cut that out and make it a little more figure friendly (but Please feel free to make it with a crust. This little savory pie is great the next day for brunch, lunch or even dinner again. Have it with a nice salad and you’re good to go.  I hope you enjoy it. 

Although known as a French dish, the quiche actually came from Germany. The word quiche means “cake” which came from the German word Kuchen.

Ingredients:

3 Cups of Zucchini, cubed

1 Cup of Bisquick

1 Cup of Cheese (in this case I used Sharp Cheddar)

1/2 Teaspoon of Marjoram

1/4 Teaspoon of Garlic Powder

Salt & Pepper to taste

1/2 Cup of Extra Virgin Olive

1 Small to Medium Onion, diced

1 Tablespoon of dried Parsley

4 Eggs

Preparation:

Preheat oven to 350F. Place everything in a big bowl and mix.  Place into 9″ inch baking pie dish and bake for about 35 minutes.  You want a nice golden crust on top.

  1. This is a great recipe! I love quiche, but don’t eat it very often because of the carbs… but this is great, thanks for sharing 🙂
