I bet you’re wondering what the heck is Freekehlicious. Well it’s a fire roasted green wheat, harvested when the wheat is immature, and its grain is soft and has the most nutution to it. The word freekeh is Aramaic for “to rub”, which refers to the techinique by which freekeh is made. Long recognized in Middle Eastern cuisines, freekeh has broken into the American market as part of the burgeoning interest in whole and ancient grains. It’s been difficult to find on American grocery shelves until now.
Freekehlicious is announcing their debut January 8th 2013 with a new resealable pouch which I think is great for storing away. After you make it you can store it in the refrigerator for up to 8 days. Freekeh offers so many benefits like high fiber (it has four times the fiber then brown rice,) high protein content, high calcium for bone health, rich on lutein (important for eye health,) low GI (helps to prevent diabetes), low in available carbs and rich in prebiotic properties (important for fueling the health and growth of healthy bacteria.) If you’re looking to start the new year with healthy choices this would be a great product to start with.
I have to say that even my 2 1/2 and 4-year-olds loved it because it has a pop texture to it, which made it fun for them to eat. They would laugh every time they bit into it. Yesterday I made it with some chicken, summer squash and zucchini and this morning I made breakfast which I will share the recipe with you. It was a healthy start to our day. You can use Freekeh for anything really to making burgers, salads, sides, soups and so much more.
This is serving is for 2 people:
2 Granny Smith Apple decord
1 vanilla yogurt
1/4 cup of honey or agave necter
1 to 1 1/2 cups of freekeh (depending on the size of your apple)
1 tablespoon of lemon juice
pinch of cinnamon
1 Banana
Start off by decoring the apple removing the gut and chopping it up and placing it in a bowl. Chop up a banana, pinch of cinnamon, lemon juice, honey, yogurt and freekeh. Mix everything together and place back into the apple. After your done eating the inside enjoy the rest of the apple.
