Peppermint Bark

What could be more traditional than using peppermint around the holidays?  I had a bag of red vanilla chips lying around and I decided to make some Peppermint bark.  It’s a great treat to set on the table when guests come over.  A lot of peppermint bark is made with white chocolate, but I figured the red vanilla would be fun and festive.  All you do is take a bowl that will nicely fit over a small pot.  Add some water in the pot then place bowl on top with vanilla chips.  Begin to stir and when chocolate is melted add your desired filling which in this case would be ground up Peppermint Candy Canes.  Mix and spread out on parchment paper on top of a cooking sheet.  Place in refrigerator for about an hour or so then take out and break into pieces and enjoy.
