Peanut Butter & Jelly Blondie

I decided today to try and make some Blondie Bars.  For some of you who don’t know, a Blondie Bar is like a brownie but has a Butterscotch taste to it.  I wanted to try and make something a little different though.  I made some Peanut Butter and raspberry Jelly Blondies.  I used actual Peanut Butter instead of Peanut Butter Chips.  I’m pretty sure you could have these for lunch that’s how darn good they are with a nice glass of milk.  Just saying.  How ever you want to enjoy them, they are fantastic.

    1. 1 1/2 sticks salted butter, melted and cooled
      1 1/2 cups all-purpose flour
      1 teaspoon baking powder
      1/2 teaspoon fine salt
      1 1/2 cups packed light brown sugar
      2 large eggs, beaten
      4 teaspoons vanilla extract
      1 cup peanut butter
      1/2 cup raspberrypreserves

      Directions
      Preheat the oven to 350 degrees F

      Whisk together the flour, baking powder and salt in a bowl. In another bowl, mix the melted butter and brown sugar until combined. Add in the eggs and vanilla, and mix until combined. Add the dry ingredients to the butter mix and gently fold with spatula. Fold in the peanut butter.

      Pour the batter into the baking dish and parchment paper. Scoop preserves on. Using a skewer, knife or chopstick, make swirly patterns into the batter with the preserves. Bake until the top is shiny and a toothpick comes out clean, 30 to 35 minutes. Cool. Using the ends of the parchment paper lift from dish place on counter and cut into pieces and serve. Enjoy!

    These look fantastic! Was wondering what the equivalent of 1 1/2 sticks of butter is in grams? Never seen it measured like that before! Thanks 🙂

    1. well this is what I know 1 stick butter=1/2cup=4 ounces=113.5 grams..hopefully that helps
