Not sure about you, but I’m a big fan of Mexican food. I love cooking it and eating it. My kids especially are obsessed with Tacos or Nachos. So I have to change them up once in a while. The other night I just wanted something easy and somewhat light to put together to eat.
I picked up some chicken breast, Blue chips, salsa, avocados, mexican cheese blend and sour cream. I sliced up the chicken and cooked it up on a skillet. This is something really simple and takes no time at all. Put the chips, cheese, salsa and chicken in the oven for about 10 minutes or until cheese is melted. Then scooped some fresh guacamole and some sour cream on top and enjoyed. I know this isn’t the Grande Nachos, but you can create any kind of nachos; from chorizo to seafood as a topping just have fun with it. But most importantly enjoy eating it.
I never think of putting chicken on nachos but that looks great!

Yummy idea! Would work just as well with turkey leftovers too! Can’t wait for thanksgiving…….. My household looks forward to turkey enchiladas more than a traditional turkey dinner! Adding nachos to the mix.
