Did you ever wonder what to do with leftover chicken? Well there are so many things. You can shred the chicken and add it to tacos, or make some stir fry etc. But the other day I decided to make some fresh homemade salad. I added leftover chicken (I shredded the chicken), beets, romania lettuce, shredded carrots, purple cabbage, gorgonzola cheese, fresh garden tomatoes, red peppers, onions and chinese chow mein dry noodles. I seasoned with apple cider vinegar, olive oil, salt and pepper. It was super yummy, refreshing and healthy.
