This is the recipe that I brought to The Chew, I hope you enjoy it !!
EGGPLANT ALLA NORMA
Ingredients:
1 med Eggplant
4 large garlic cloves
2 Tablespoons of Olive Oil
1/4 lb Baby Porto Bella Mushrooms
1 Can of Plain Crushed Tomatoes
¼ cup of Fresh Basil
1 Large Onion
1 small can of Anchovies
8oz Capers
1 package of Rigatoni (I used the Vegetable Rigatoni)
8oz of Mozzarella Balls
1/4 Cup of Parsley
1/4 Cup of Parm Cheese
Preparation:
Peel and cut eggplant into cubes, cut and dice onions, shredded garlic.
Add olive oil to skillet to med high heat, add Eggplant, mushrooms, onions and garlic.
Cook for about 15 minutes or until you notice eggplant getting softer.
Add Can of sauce and basil to skillet cook for another 10 minutes.

This dish looked so delicious on The Chew. The sauce looked very hearty. I can’t wait to try it. I’d have liked to watch you prepare it on the show. Although the fried pizza looked yummy, it seemed simple to figure out how to make it. Congrats on the show!
