This past weekend was the celebration of Easter and Passover. The 2 holidays have 2 popular dishes that are made every year. One is with Ham and the other with Matzah. So If you’re like me and had family over this weekend for the holidays, I bet your thinking on what to do with all the leftovers. So here are a couple ideas with what to do with Ham and Matzah:
Ham:
1. Asparagus (or Green Beans) and Ham Casserole
2. Ham and Swiss (or Cheddar) Loaded potatoes
3. Ham and Zucchini Quiche
4. Roasted Brussel Spourts with Ham and Garlic
5. Ham fried Rice
6. Ham Soup (like a Split Pea or Vegtable)
Matzah:
1. Pizza
2. Lasagna
3. Bread Crumbs
4. Peanut Butter and Jelly Sandwich
5. Crusty Cheese Bites
6. Matzo Brie
These are just some ideas. I’m sure there are plenty more. Remember with imagination and creativity you can create anything. I hope everyone had a great holiday.
I LOVE matzah! One of my friends made a brown sugar and butter mixture and poured it over matzah, baked it for a few minutes and covered it in chocolate. It was delicious.

We love leftovers here too – and when we can’t stand the thought of any more ham, we cube the rest and keep it in the freezer for another time. This week we’ve made omlettes and ham and cheese muffins (for the kid’s lunches) with the leftovers. We even managed to make extra muffins to keep in the freezer for future lunches.
Thanks foe all the ideas – I’d never thought of ham fried rice. We make it sometimes with other leftover meat,but never tried ham before.
