Pecan Crusted Cod

Cod has become one of my favorite fish among others.  So tonight I decided to make pecan crusted cod topped with an apricot & honey drizzle, with a side of some spring mix salad and broccoli and cheddar couscous.  This dish goes great with a Riesling wine.

 Cod flesh is moist and flaky when cooked and is white in color.  In the United Kingdom, Atlantic cod is one of the most common ingredients in fish and chips, along with haddock and plaice. It is also frequently consumed in Portugal, Spain and Italy. (Source: http://en.wikipedia.org/wiki/Cod)
