What’s Cooking??

This is a healthy and super yummy dish for the New Year.  Zucchini-cheese pancakes topped with Salmon and a white country sauce.

Just because its healthy doesn’t mean it has to lack great flavor.  This will keep your tastebuds salivating for hours.

    fancy!! i am an extremely picky eater, so most of my food doesn’t have much flavor by choice 😉

    1. Here is the recipe as follows:

      Salmon Prep:

      1 lb of Salmon
      Salt & Pepper
      Juice of a lemon
      2 Tbs of olive oil

      Prep:

      Season Salmon with salt, pepper and lemon (Tip: if you want to make it a little spicy add some paprika)
      put olive oil in the pan and salmon on med heat. Should take about 15 minutes or so depending on how strong your stovetop. (Tip: place a fork in the salmon so you can take a peek at the inside)

      Zuchini Ingerdients:

      4 Zucchinis
      Salt & Pepper
      1/2 TB Parm Cheese (optional)
      2 Eggs
      1/2 cup of flour
      2 Tbs of Olive Oil

      Prep:

      Shred Zucchini into a bowl. After shredding make sure to put zucchini in a paper towel and squeeze all the water out of it so its dry. Beat the eggs. Mix flour, salt, pepper, parm cheese, zucchini, and eggs. Start to form little patties with them. Place on skillet with oil on med to high heat. Each side should take about 5 min or until browned.

      Ingredients for Country White Sauce:

      1/2 cup vegetable oil
      3/4 cup all-purpose flour
      1 tsp salt
      1 tsp ground black pepper
      4 cups milk

      Prep:

      Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, Just add a little more milk.
