I have done these pancakes before on one of my older posts. But I figured I would bring them back and share with people how easy they are and how you can have them with a side of sour cream or in this case a scoop of salmon cream cheese. zucchini pancakes are a great side for dinner or great for a snack. Super easy to make. First shred the zucchini (after shredding place in clean dish towel and squeeze the water out of the zucchini), add eggs, parm cheese (or any other cheese, its optional), about 2 tablespoons of flour (I used whole wheat flour), salt & pepper, and a dash of cayenne pepper, mix everything together. Place some oil into a skillet (about 2 cups for a large skillet). Drop 2 tablespoons of the mix in to the skillet making about 4 piles or more if you can fit. Should take about 2-3 mins on each side (you’re looking for a golden brown color, in my case I like them a little darker for a little more crunch). Enjoy!
